The wonderful combination of pork and beef is the base of this delicious meat loaf. A layer of Gruyere cheese and mushrooms are hidden in the middle of this meat loaf, making it even more delicious!

  • 2 slices pumpernickel bread
  • 450g lean minced beef
  • 450g minced pork
  • 1 egg
  • 1 small onion, finely chopped
  • 5 tablespoons tinned chopped tomatoes with onions and garlic, drained and juice reserved
  • 4 tablespoons finely chopped green pepper
  • 1 tablespoon onion powder
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon ground black pepper
  • 2 dashes Worcestershire sauce
  • 2 dashes soy sauce
  • 6 slices Gruyere cheese, sliced
  • 100g fresh mushrooms, sliced
  • 125ml sweet chilli sauce

  1. Preheat oven to 180 C / Gas 4. Grease a 23x13cm loaf tin. Tear the pumpernickel into pieces and place into the bowl of a food processor. Pulse several times to chop the bread into crumbs.
  2. Lightly mix the pumpernickel crumbs, beef, pork, egg, onion, chopped tomatoes, 4 tablespoons of the reserved juice from the tomatoes, green pepper, onion powder, garlic salt, black pepper, Worcestershire sauce and soy sauce together in a bowl until the mixture is very well combined. Do not over mix or the meat loaf will be tough.
  3. Place half the meat mixture into the bottom of the prepared loaf tin and gently press to smooth the top. Place 3 slices of Gruyere cheese over the meat mixture and spread the sliced mushrooms evenly over the cheese. Top the mushrooms with the remaining 3 slices of Gruyere cheese and spread the rest of the meat mixture in an even layer over the cheese. Press the top gently to smooth.
  4. Bake the meat loaf in the preheated oven for 45 minutes, then remove from oven and spread with the chilli sauce in an even layer. Return the meat loaf to the oven and bake until the juices run clear and the chilli sauce has thickened into a glaze, about 15 more minutes. Let the meat loaf stand for 10 minutes before slicing.

very nice and very quick to prepare. used fresh onions did not used the chilli or wine very tasty-26 Mar 2016

Wonderful recipe, although I slightly changed it.I used fresh tomatoes (cooked for a while until most of water evaporated), fresh onion and garlic (fried off on olive oil).A glass of red wine gave an amazing flavor to the whole dish.I also didn't bother with chilli sauce as it already has a strong flavor.Big thanks for the idea!-22 Feb 2014

Oh Yes! Pumpernickle in my meatloaf topped by Chili sauce and with Swiss hidden inside. This is "good stuff, Maynerd!" Maybe next time I'll even try it with a little hotter version of Chili sauce. I'll try some sautéed fresh mushrooms, too.-30 Jan 2010
