Obviously everyone knows what rice pudding is. For example, in our country, especially the one made for parastases, it is also called "collar". And as it is par excellence a "sweet" dessert, I also tried the fasting version, with soy milk.

RECIPE PREPARATION Rice with milk (fasting):

The procedure is very simple. Boil the soy milk (preferably in a pot / pan with a thicker bottom) and over it, in the type of boiling, add the rice. Leave on low heat and chew continuously until the rice grains boil well, avoiding sticking.

I should know (I was a little fooled) that soy milk has a higher consistency than animal milk, which is why the amount of rice must be smaller than usual.

Near the end, grate the lemon and orange.

  • 1/2 teaspoon paprika (hot or sweet, to your heart's content)
  • the juice of a lemon
  • extra virgin olive oil

How to prepare lentil soup:

Heat 2.5 l of water in a large pot. When the water boils, add the lentils + a teaspoon of salt and simmer over medium heat for 30 minutes. Meanwhile, sauté the finely chopped onion and garlic in 3 tablespoons of olive oil. When the onion becomes translucent (after 3-4 minutes), toss the carrots, peppers, tomatoes and parsley stalks in the pan, all finely chopped. Sprinkle the cumin and paprika on top, drown everything with the remaining 500 ml of water and let it simmer over medium heat for 15 minutes.

Transfer the vegetables to the pot with the lentils, cover the whole situation with a lid and let it boil for another half an hour (until the lentils are soft and you can't feel like it).

If you want an extra-smooth soup. and if you still have patience, pass it with the vertical mixer. If not, squeeze the juice from a lemon, add salt and pepper and serve with a tablespoon of yogurt (if you are not fasting), some chopped parsley and some more lemon.

Rice noodles with milk

Bring the milk to a boil with a pinch of salt. When it is almost cooked, add the crushed noodles. Mix well and simmer for 10-15 minutes on low heat.
