RECIPE PREPARATION Fried phytophagous washers:
Wash the fish, dab it with absorbent napkins, salt it and set aside for 10 minutes.
Put breadcrumbs in a deep plate and pass the fish until it gets a crusty crust everywhere. Fry in an oil bath until golden.
Remove from absorbent wipes.
Serve with a lot of garlic sauce and polenta.
